Peach Ice Cream


Makes 5 cups

2 cups fresh peaches, skinned, pitted and diced

1/4 sugar

1 tsp. lemon juice

4 egg yolks

3/4 cup sugar

1 1/2 cups whole milk

1 cup heavy cream

1 vanilla bean, split in half or 1 tsp. pure vanilla extract


Macerate the peaches with the lemon juice in a saucepan with the lemon juice and sugar for about 10 minutes or until syrupy. Simmer over medium heat until the peaches are soft for about 5 minutes. Let cool completely. Whisk the egg yolks with the sugar until thick and pale. In the meantime, heat the milk, cream and vanilla bean until steam rises. Gradually add the hot cream to the egg yolks, whisking constantly to prevent them from scrambling. Pour the mixture back into the saucepan and cook over medium heat until the cream coats the back of a spoon, 5 to 8 minutes. Strain the cream and let cool completely. Stir in the peaches. At that point use a hand-held mixer to puree some of the peaches and leave chunks in the base. Churn the mixture in an ice cream maker according to manufacturer's instructions. Transfer to a container and freeze until firm.

Sounds delicous...We used to make homemade peach ice cream all the time growing up...my husband is a diabetic, now...AND sadly, it was one of his favs.!! However, I am going to pass this on to my son who is a chef, he and his wife will love it...as well as my daughter and SIL...
You just sent a comment to me regarding your "Chrissy" (sorry, I don't have an email for you...this seems kind of lengthy for a comment) but.......did she ever allow the fella to get any closer...or did she always only show her teeth?? This is our second attempt at Maggie's breeding...first time we kind of understood...she was in unfamilar surroundings...so this time...we had "boyfriend" court her at our home...where she is a bit protective...but always does pretty well outside....I am really starting to think she is just a prude...we've missed this go round of opportunity....but maybe next time...My husband and I really want to keep one or two of her pups (cart before the horse...maybe??) as she is a "field trial" dog...and she was born to hunt...we hate not to keep her lineage going...she is really a beauty...and such a loving thing...except around males during her mating season!! Her sister...Cookie (who we rescued and should have probably bred, but instead opted to "fix" her, she's a shit-zu mix and always receives "plays well w/others on her report card!!) Sorry to ramble...just wondering if you ever had any luck w/Chrissy...did she ever lighten up???

Ohh Julie, the ice cream sounds delicious! I will have to try that. It sounds and looks so refreshing!

Yes, we have beautiful wildflowers around here and I didnt get ANY flowers planted this year so I love having them,especially when the boys pick them for me:)
